Easy bean soup

You can start with can beans or a half pound of dry beans
about 4 cans or cooked dry beans
3/4 lb. ham shank........bacon or leftover ham bone
1 C. diced potatoes
1 C. diced onion
3 large tomatoes, skinned and chopped or one can
Salt and pepper to taste
parsley and a large shredded carrot
You can add water as needed
I like to use the bone of a ham and a cup of the meat...........nothing is exact in this.......leave out the potatoes or carrots.......make more or less......slow cook........any bean .......navy, black ect

Oh yes! Bean soup is one of my favorites! That recipe sounds fantastic! I'm trying it! Sometimes I add celery/spinach/greens/chicken stock/pasta. Basically just throw together beans with what you like! Good for vegetarians and low-carb people too. Just omit what you can't/don't eat. Replace with veggies or brown rice! Eat a bunch 'cause it's healthy! Thanks for the recipe Ruth!

Love the variation for bean soup. It is definitely getting to be beans and cornbread weather here. I usually cook up a pot of pink beans and before I get around to doctoring it up they have disappeared. Hmm. Someone around here likes beans and cornbread! I am going to have to work hard to beat them to the pot but we will give your recipe a try. Sounds yummy!
