Years ago I used to make this salad and I have lost the recipe. Some of the ingredients are cr. pineapple. cottage cheese, grated cheddar cheese, whipped topping etc. It is especially good for the holidays. Thanks :-)

We have had this too, sometimes with very finely grated carrots and coconut too.

I think this is your recipe:
YUM-YUM SALAD:
1-60z.package lemon gelatin
1 c.cold water
1-20pz.can crushed pineapple, undrained
1 c. granulated sugar
1 c. shredded cheddar cheese
1 c. heavy whipping cream, whipped (unsweetened
1/2 c. finely chopped nute, reserving 2 T. for garnish
Combine gelatin with cold water in small bowl; set aside to seak
I small saucepan bring pineapple and sugar to a boil; reduce heat and simmer, uncovered for 5 minutes. Remove from heat and add gelatin mixture, mixing well. Refrigerate.
When partially set, stire in the cheese and nuts. Carefully fold in the whipped cream. Pour into serving dish and garnish with reserved nute.
Refrigerate until set.
Makes 16 servings.
Note: Do not substitute non-dairy whipped topping for the unsweetened whipped cream.
Nutritional facts per serving:188.3 calories; 34% calories from fat; 7.5 g. total fat; 17.6mg.cholesterol, 96.9 mg.sodium, 72.9mgpotassium, 28.5g. carbohydrates, 9.5g.fiber; 27.9net carbs, 3.4g.protein.
I thought it would be in my Famous Recipes from the last 100 years, but it wasn't. I went to allcooks.com, and it was there.
I have had good luck with recipes from that site.

*****I am not convinced that the 1 c. sugar is really needed, since pineapple is so sweet anyway.

Yes that looks like the recipe. I used to work as a dietitian at Miami Valley Hosp. here in town and we used that alot for our special meals for the doctors etc. Then we adjusted the recipe for our own personal use.

Dear "Bag Lady,"
Glad I could help! It sounded so good when typing it I laid the recipe out to make sometime. Serves 16, so would have to reduce it a lot for just my hubby and me.
