Hamburger casserole
1-2 lbs of hamburger browned and drained
1 cn Cream of Mushroom soup
1 cn Cream of Celery soup
2-3 cans of mixed vegetables--drained
1 pkg Velveeta
1 pkg hash brown patties (you could you tater tots but they take too long to arrange.)

crumble the hamburger into the bottom of a 9x13 pan
mix two soups and veggies and spread on top of hamburger
slice the velveeta about 1/4 inch thick and lay on top of the
veggie/soup mixture
lay the hash browns on top salt and pepper to taste
Bake at 350 for around 30-45 minutes until the hash brown are golden and the cheese is bubbly


Taco Casserole
1 bag of corn chips (we like it hot so we use chili cheese chips)
1-2lb of hamburger browned and drained and crumbled
1 pkg of taco seasoning--again we like the hot
1 can Cream of Chicken
1 can Cream of Mushroom
1 lg bag of shredded cheese
a couple of tablespoons of salsa or picante is optional

dump the corn chips into a 9x13 pan and spread them out
sprinkle the hamburger over them
mix both soups and taco seasoning and salsa if wanted
spread mixture over the hamburger
top with cheese
Bake at 350 for 30 or so minutes.
can be served with diced tomatoes, green onions, sour cream, and lettuce

We do a casserole similar to your hamburger casserole, but with biscuits on top.

Another quick variation is to use canned baked beans instead of the soup and veggies. We also top it with cheese and biscuits.

Cool. We used to make it without the veggies (the original recipe that I was given) until one day when my 10 yr old wanted it and I said that I'd rather have something that with vegetables. She shrugged and said, Put vegetables in it, that's what they do at school. So we tried it and loved it that way.

The reason I don't know exactly how much hamburger is because I buy those HUGE packages at Walmart and cook it all at once. Then I drain it, cool it, bag it up in quart freezer bags and put it in the freezer. Then if I want to make a casserole, chilie, spaghetti, or anything else that requires hamburger it's already cooked. Like I said, I'm the Queen of Quick.

a good meat thats quick is take a brisket and lay in a crockpot fat side up and put a tablespoon or two of mustard.( I don't measure just squirt.lol ) then sprinkle a package of onion soup mix on top and cook for 8 hours on low.( Do not add water!) Remove the brisket and take the fat layer off and throw away and then you can make gravy with broth or use it to dip a hot brisket sandwich in to. Very easy and taste great! It freezes well also.
