I wouldn't get caught up in getting a stash. You'll accumulate fabric soon enough. Find something you'd like to make and go from there. Have fun. I have a Husqvarna 500 computer model that I've had for @ 15 years , it runs great.

Welcome from Minnesota. I would do some kind of machine that is not to exspensive until you decide what you like in quilting. I enjoy taking mine with and do alot of hand sewing.So let your first project get you going.

Is there an older machine in your family that you can borrow to get a feel for sewing? Then you have an idea of what you would really enjoy in a new machine. I would go with an older all metal machine; an older Singer Featherweight is wonderful for piecing and taking to workshops to learn new techniques. I would try Craiglist, or watch the papers and yard sales. The newer machines have lots of bells and whistles but are not a sturdy and forgiving as the older workhorses. Stay away from high end electronic machines until you know what you want!
I, personally have 3 treadles! and a FW for workshops, and an older Janome, and......
