I think judges are very particular about the binding. They want it filled with batting, not flat. They want the mitered corners sewn down (hand sewing). They usually do not like all-machine-sewn binding; they prefer the binding machine-sewn to the front of the quilt, and then hand-sewn to the back.

They want the quilt to lie (or hang) perfectly flat -- no wavy borders -- and they want it perfectly squared. I would block a quilt carefully before giving it to the quilt show (something I don't normally do with my quilts).

I've never entered a quilt show, so all this is just hearsay -- gathering information in case I ever do enter a quilt into a show!

Know the demographic of the show you're entering. In our area (small town) very traditional patterns and colors are the preferred entries. In larger cities (I'm near Pittsburgh) art quilts and non-traditional quilts are preferred.
I think the main thing is to just have fun. I don't enter to win but to learn. It's amazing the helpful feedback you get from judges, viewers, and other entrants.
    Good luck!

Judges look at points! Make sure your seams match. Good luck, trying to work up my own courage to enter a juried show, I have done the little guild ones around here, but my art stuff does not go over well in these small towns. Double wedding rings usualy win, hands down.

Thought of another thing (please excuse my "senior moments"): the amount of quilting must be equal all over the quilt. Can't have too much in one area and then less dense in another.
Pam: in our area it seems "Sunbonnet Sue" wins every year. Interesting how different parts of the country have different favorites.
Also, are you a member of the local quilt guild? The members of the local guild here seem to take home the ribbons.
