    I used to cut mine at 2.5" but everytime I would have a few missed spots on the back.
    I sew to the front turn and SID on front. T4 for my last quilt I cut the binding at 2 5/8" and
    I'm pleased to say that I didn't miss any at the back. I can also say I made a perfect
    (to me) binding with perfect miters.

    I use 2" for cotton batting. Like charsue, I take a little more than 1/4" seam but maybe not quite 3/8".

    I have only used 2 1/2" strips for binding on a regular quilt. On a very small wall hanging, I use 1 7/8" strips.

    I'm so glad you posted this. I've often wondered how much variation there was. Mostly, I use 2-1/4, but it depends somewhat on the appearance I want on the quilt. If it's a wall hanging and I want a very narrow binding, I'll cut about 1-3/4.

    2 1/2. I machine sew to the back, then pull forward and sew the front. If I do a 2 1/4 then my machine misses stitches at the corners and sometimes at the binding joins.

    I tried those silky premade bindings from Joanne's and could not make them lay nicely. I need to use cotton at 2.5.

    Two and a half works for me too - that size allows a nice filled binding.

    I cut 2" wide for double fold bias binding and use a thin cotton batting. I find that gives me a nice full finished edge.
