    Apple Muffins (very moist, no topping needed)

    2 Eggs
    2 c. Sugar
    1/2 c. Vegegtable Oil
    1 tsp. Vanilla
    Beat eggs until light and fluffy, gradually add sugar, oil and vanilla

    Sift together:
    2 c. Flour
    1/2 tsp. Salt
    1 tsp. Baking Soda
    2 tsp. Cinnamon
    1/4 tsp. Nutmeg

    Add sifted ingredients to first mixture.

    Add in:
    4 c. peeled and chopped apples ( roughly 1/2 in slices, 1 1/2 in cubes)
    1 c. Chopped Walnuts

    (The apples bake into this unusually textured mixture)

    Pour into greased muffin pans or a greased 9X9 or 8X8 inch pan. Bake muffins for 20-25 minutes, pan 35-45 minutes.

    You can substitute 1 cup of whole wheat flour for 1 cup of white flour, 1 cup of Splenda for the two cups of white sugar and use egg substitute, if you wish.

    This is one of my favorites :D ...there are some in the family who do not like chocolate so I make this in cake form for them. If they are REALLY nice to me sometimes I drizzle a little sourcream/powdered sugar glaze on the top :lol: :wink:

    I am not usually a muffin maker, but these apple muffing sound great! I love all things apple!

    They loved the above muffin recipe:)We had 2, 3hr meetings and we made everything from french bread w/dipping sauce, to different varieties of french bread...muffins and basic breads. They had a great time (and I do too for breads are so fun!) The second meeting they came w/homework....their own researched muffins made from scratch and then any that were a problem...so we 'fixed' them by adding other flavored icings, etc...what a great time!! Thanks all....now, I will be searching for more specials for my kid to take to a judge before long...we take 3 different breads....a loaf, muffin and bread sticks or something like it:0)Skeat
