    * Exported for MasterCook 4 by Living Cookbook *

    Cranberry Bread

    Amount Measure Ingredient -- Preparation Method
    -------- ------------ --------------------------------
    1 1/2 lbs cranberries, fresh
    8 cups flour
    4 cups sugar
    6 tsp baking powder
    4 tsp salt
    2 tsp baking soda
    2 Tbs lemon rind, grated
    4 Tbs orange rind, grated
    1 cup orange juice, frozen concentrate
    2 cups water, boiling
    1 cube margarine
    4 ea eggs, beaten
    4 cups nuts, chopped

    1. Rinse cranberries

    2. Combine flour, sugar, baking powder, salt & baking soda.

    3. Combine lemon and orange rind (or 3 Tbs dried orange peel), orange juice concentrate, water, and margarine. Cool mixture.

    4. Mix beaten eggs with cooled mixture. Add this to dry ingredients until all dry particles are moistened. Add cranberries and nuts.

    5. Bake at 350 º for 55 to 65 minutes. Makes 5 regular loaves.

    6. This also makes 12 mini loaves - bake for 45 minutes

    I love cranberries, but how much is a "cube of margarine"?

    1 cube equals 1/2 cup.

    Your timing is great. I had bought some cranberries at Thanksgiving and threw them into the freezer. I have been looking recipes over online but nothing seemed to inspire me. I always like trying recipes shared by friends.
    I will have to make this soon. Sounds like it will be quite tasty.

    in step #3, do you cook those ingredients awhile? 'cuz it alludes to cooling the mixture....

    The 2 cups of boiling water will melt the margarine and orange juice concentrate.
