Pinecone Quilts

I've got a ton of potatoes that need to be used and just like fabric I can't bear to throw anything out. I'd love to get some tried and true potato recipes that I can use to make as gifts this Christmas.

Potato Candy
1 cup mashed cooked potatoes
2 teaspoons vanilla extract
2 pounds confectioners' sugar
peanut butter
mix to make stiff dough. roll out between two pieces of waxed paper. Peel top paper off, spread peanut butter over potato mixture. Carefully roll up like a jelly roll. chill and slice.

you can also shape Potato mixture into balls and dip in melted chocolate

wow , never ever heard of these before ! Sound really interesting and the twin 10 year olds may want to give this a go for a surprise treat for everyone . Thank you !

Mother used to make potato candy and we loved it - didn't taste like mashed potatoes at all.
