I've made this recipe for years, being busy with kids and work because it was easy and fast. Yet a favorite with everyone from friends, work assoiates, and kids.

    Cherry Cheese Cake

    1 8oz pkg cream cheese
    1 12oz pkg cool whip
1/2 to 1 cup sugar (your preference)
Beat all this together until smooth, poor into grahm cracker crust, chill over night or until stiff. Top with any kind of fruit you like, fresh or canned.
I use low fat cream cheese and cool whip and cut sugar to 1/2 myself, but I didn't like it with less than 1/2 c sugar.

I think any sugar substitue would work just fine as long as you aren't adding any liquid to it. It may not set up then. Have fun, eat well.
