    You will first need to make to (2)-Pastry shells
    Pastry recipe:
    3-C.sifted flour
    1-t. salt
    1C.lard or other shortening ( I always use Crisco lard)
    5 T.cold water
    Sift the flour & salt together,cut in the lard until pieces are the size of small peas.Gradually sprinkle water over mixture,mixing lightly with a fork after each addition;add enough water to hold pastery together.Roll out on a floured surfaced & fit into you pie pan/pans.

    Shoofly Pie (use 2/3 of pastry recipe to make 2 -8" pies)
    1-1/2 C.flour
    1 C. firmly packed brown sugar
    1/4 C.butter or lard
    1/2 C.light molasses
    1/2 C.hot water
    1/2 t.baking soda

    Combine flour & sugar.Cut in the butter/lard until mixture is very crumbly.Set aside.
    Mix together the molasses,water,& baking soda.
    Divide evenly between 2 pastry-lined 8" pie pans.
    Top each pie with 1/2 of the crumbs.
    Bake 450* 10 minutes
    Reduce heat to 350*;bake about 20 minutes longer or until firm.
    Cool

    Makes (2) 8"pies
