    Default Smoothy Eggs

    I really like to whip up my eggs in the blender before I scramble them. They come out so light and fluffy. I'll also through some veggies into the blender with the eggs..anything goes...whatever I have in the fridge. We call them "smoothy eggs". After they're whipped up, I pour them into a saute pan to cook on the stove, or into a baking pan to bake in the oven. Sometimes I'll sprinkle cheese on top as they are cooking. Each time I make them, they come out a little different, but they're always really yummy.

    Great idea!

    I make a sandwich for DH every night at 10 pm. I add a splash of 1/2 and 1/2 to the eggs and scramble them. Add a slice of melted cheese and put on buttered toast. It’s become his favorite snack.

    Never thought of "blending" eggs. I am not veggie adverse but this might be a way to squeeze in an additional serving. Thanks for the new idea.
