Forgot about these, need to make some soon. Canned salmon, diced onion, saltine cracker crumbs and and one or two beaten eggs. Mix and fry in patties. My mother used to serve these with creamed potatoes and peas.

My favorite salmon patties are made with the seafood breader from walmart. It's House-Autry brand and the recipe is on the bag. It's sooooo scrumptious! This is what the breader looks like http://www.walmart.com/ip/House-Autr...-2-lb/10323035

Ok I am sorry but I have to put my two cents on this one, I think canned salmon is gross. I use fresh salmon when I make my salmon patties:

I have a kitchen aid mixer with a meat grinding attachment for it. I buy a whole salmon filet about 2.5 to 3 lbs. I have the butcher skin it for me.

Then I chop it in hunks, run it thru the food grinder, then I add red onion, 2 tablespoons of parsley, 3/4 of a jar of dijon mustard and 1/2 to 3/4 of a container of the Progresso Italian bread crumbs and two eggs, I mix this all together and then make them into patties, I freeze them and usually can make about 15-18 out of this recipe!

They are awesome and you will never eat canned salmon again!
