I love cucumber and cold salmon out of the can sandwiches. Remove the bones, flake. Spread Mayonaise on bread, top with cucumbers and cold salmon. It is a favorite summertime sandwich of mine.

I make my own tatziki: I individual portion of unflavored Yogurt
    1 cucumber sliced very thin
Add to the yogurt : 2 tsp of oil
    2tsp white vinegar
    1 clove of garlic crushed
fresh or dry mint to taste and
    some dill.

    Mix everything together and re
gerate for at least an hour

Great with kebobs, replace the mayonnaise in pita bread or wraps

Bobbielinks, I cut my cucumbers and add Green Goddess dressing to them. I refrigerate them for an hour before dinner.
I eat them like candy. Eiltcoq.

Cimarron, That sounds delightful. I'd like the recipe when you get it from your friend. Thanks. Eiltcoq.

My sister chops them and mixes them with some chopped tomatoes, spring onion, a little mayo, Claussen pickle juice (small amount) and dill. Let it sit and they are fantastic!
