That's how I do it, too. Fairly easy after getting them spaced as you want.

Sew all the way a round the outside edge with the backing and top facing each other, batting attached to either piece. Leave a space one foot or so UNSEWN to turn the sandwich inside out. I generally make rounded corners---marked with a cereal bowl--so I don't have to be so careful with a square corner. Reach in the hole pull out one corner at a time and shake the whole thing out---------------DONE!

This is how I do mine. I also put them around the quilt center, on top of a border.
