Default Green tomato question

Not sure if this belongs here, but . . .

I pulled up all the dying tomato plants and gathered a bowl-ful of green tomatoes. I know people eat fried green tomatoes, but I never have. I am going to make the garlic-onion-zucchini-tomato stuff DH loves and I am wondering about adding the green tomatoes for extra veg content and so they don't go to waste. Any thoughts??

I had to pick my tomatoes while green so the critters didn't get them first. I put them on a window sill and let them ripen there. I'v also tried my hand at fried green tomatoes - not bad. Check on line for recipes for green tomatoes. And, yes, I'd put some in my recipe.

I have made green tomato pickles before when I had too many. They are good.

I pickle mine, but you can also make a salsa verde from green tomatoes.

I would soak them in salt water for a couple hours, rinse them and put them in. should be really good.

Another way to ripen tomatoes or fruit like peaches or pears, is to put them in a brown paper bag and leave them on the counter or a shelf. They release a bit of a gas that helps the ripening process. Also, don't ever store tomatoes in the refrigerator, they ripen and store better at room temperature.

I dehydrate mine until they are crunchy, put them in a bag in the freezer, then crunch handfuls of them into soups/stews all winter.

A quick, easy way to do fried green tomatoes is to slice and dip in the seasoned fish frying crumbs. Fry in oil.

My mother just dipped slices in egg & milk, then flour and fried. Yummy!

I tried fried green tomatoes this year and keep going back for more! Unfortunately, these are in a restaurant, and I don't have a recipe. They are good!
