Mom used to make it with cottage cheese. I use shredded cheddar instead.

I use 1 pound of ground "meatloaf mix" or ground beef, an egg, ketchup, bread crumbs, and cheddar cheese (or cottage cheese). mix well with hands and bake. I don't measure. I just dump.

I just made this meatloaf on Saturday served with steamed fresh green beans and whipped sweet potatoes! Here is my recipe:

1 ½ pounds of lean ground beef
1 cup milk
1 Tablespoon Worcestershire sauce
¼ teaspoon dried sage leaves
½ teaspoon salt
¼ teaspoon pepper
½ teaspoon ground mustard (dry)
1 large egg
3 slices of bread, torn into small pieces
1 small onion, chopped
1 glove garlic, chopped

* Spread ½ cup of Ketchup over formed meatloaf before putting into oven (optional)

Heat oven to 350 degrees. Mix all ingredients into large bowl. Spread mixture into ungreased 13 X 9 rectangular pan. (Cover top with Ketchup if desired.) Bake uncovered 1 to 1 ¼ hours. Let stand 5 minutes, remove from pan.

* I don’t use Ketchup but use a brown gravy over this meatloaf when serving. This recipe is always a hit!!

Meatloaf
2 lbs. burger ( I use half venison, half beef)
1 onion, chopped
1 green pepper, finely chopped
2 jalapeno peppers, chopped
1/3 cup pickle relish
1/2 cup salsa
8-10 saltine crackers, crushed (the little 2" X 2"ones)
2 eggs
1/2 cup milk
1 t. salt
1/2 t. pepper
2 T. spicy mustard
1 T. worcestershire
Topping 1 cup catsup and 6-8 slices bacon
Mix all ingredients except catsup and bacon, place on foil lined cake or cookie pan. Make an indention down the middle and fill with the cup of catsup and lay bacon strips over top. I cut bacon in half, so all of top is covered. Cover and bake 1 hour @ 350. Uncover and bake an additional 45 minutes. If there is grease, drain it off, let meatloaf sit 10 minutes before slicing. I get lots of compliments on this meatloaf. Makes a large loaf.

I add about 1/2 cup of Parmesan cheese ... gives it lots of flavor!

My favorite is from "Allrecipes.com" and it's called the Rempel Family Meatloaf. Quick with easy ingredients and I've always gotten compliments on it.

This recipe doesn't have any buttermilk or cheese but it is the best meatloaf I have ever tasted. It is a recipe from Giada De Laurentiis and the food network cite. I just serve it for the main course not on sandwiches.

Pancetta and Turkey Meatloaf Sandwiches

Recipe courtesy Giada De Laurentiis
.
Prep Time:20 minInactive Prep Time:1 hr 0 minCook Time:45 minLevel:EasyServes:4 to 6 servings.

Ingredients
1/2 cup plain dried bread crumbs
1/4 cup chopped flat-leaf parsley
2 large eggs, lightly beaten
2 tablespoons whole milk
1/2 cup grated Romano
1/4 cup chopped sun-dried tomatoes
3/4 teaspoon salt
3/4 teaspoon freshly ground black pepper
1 pound ground turkey, preferably dark meat
10 ounces sliced pancetta, about 10 slices
3 cups arugula, about 3 ounces
1 cup mayonnaise
4 to 6 Italian rolls

Directions

Preheat the oven to 375 degrees F.

In a large bowl, stir together the bread crumbs, parsley, eggs, milk, cheese, sun-dried tomatoes, salt, and pepper. Add the turkey and gently stir to combine, being careful not to overwork the meat.

On a baking sheet lined with parchment paper, lay out the pancetta, overlapping the slices, into a large rectangle shape. In the middle of the rectangle, place the turkey mixture, shaping into a loaf. Using the parchment paper, wrap the pancetta up and around the turkey loaf to cover completely. Squeeze the parchment-covered loaf with your hands to secure the pancetta and solidify the shape of the loaf. While still covered in parchment, bake the loaf until the internal temperature reaches 165 degrees F on an instant-read thermometer, about 45 minutes. Remove from the oven and let cool.

In a blender, combine the arugula and the mayonnaise and process until smooth. Store in the refrigerator until ready to serve.

To make the sandwiches, slice the rolls and spread with the arugula mayonnaise. Slice the turkey meatloaf and place on the rolls to make sandwiches.
