Make Jello Lemon Pudding (the cooked kind) and pour into a bought graham cracker crust, chill and top with Cool Whip. So easy that you'll still have time for quilting.

Buttermilk Pie from Texas

1/2 cup margarine, softened
2 cups white sugar
3 tablespoons all-purpose flour
1/4 teaspoon salt 3 eggs
1 cup buttermilk
1 teaspoon vanilla extract
1 (9 inch) deep dish pie crust


Preheat oven to 400 degrees F (200 degrees C.)
In a large bowl, cream margarine and sugar. Beat in flour and salt. Blend in the eggs. Stir in the buttermilk and vanilla. Pour into pie shell.
Bake in the preheated oven for 15 minutes, then reduce temperature to 325 degrees F (165 degrees C) and bake 45 minutes, or until filling is set.

Coconut Cream Pie from Texas

Cook pie crust in oven till brown.

1 cup sugar,
1/3 cup flour
2 cups milk
3 egg yolks - keep whites for meringue
1 tsp. vanilla
1-1/4 cup coconut

Mix sugar and flour together, stir in milk, bring to simmer, beat egg yolks and add a little of the milk mixture, add back to the pot,
Cook till thick add vanilla, 1 cup coconut.

Pour into browned pie crust.
Beat egg whites, add 1/4 cup sugar and 1/2 tsp of cream of tartar, and 1 tsp. vanilla. beat till soft peaks, spread on pie filling, sprinkle rest of coconut on top and brown in oven.

My husband's favorite pie is Buttermilk Pie here is his grandma's recipe
Oregon by way of Texas

Jimmie’s Buttermilk Pie – From Ken’s Grandma

9 inch unbaked pie shell
1 stick of butter (softened)
1 ˝ cups sugar
3 tbls flour
3 eggs beaten
1 cup of buttermilk
1 tsp vanilla
1 tsp nutmeg – sprinkled on top before baking

Cream butter and sugar, and flour till blended. Beat eggs, blend buttermilk and vanilla. Gradually pour milk mixture into the butter mixture stirring until blended. Add a pinch of salt. Pour into unbaked 9-inch pan shell. Sprinkle nutmeg over top of pie and bake at 350 for 40-50 minutes or until toothpick comes out clean.

NH - pumpkin cheesecake pie - awesome

In a large mixing bowl beat 2 or 1 8 0z packages of cream cheese until fluffy. Add 2/3 cup sugar and 2 teaspoon of pumpkin pie spice. Beat together. Then add 2 eggs and mix, Stir in 1 can of 15 oz pumpkin

Pour into a ready Graham Pie Crust.
Bake at 350 for 35-40 mins or until center is almost set.
Cool for an hour on a wire rake.
Refrigerate for 3 hours before serving.

If you do not have pumpkin spice you can use the following: 1 teaspoon of ground cinnamon, 1/2 teaspoon ground ginger and 1/4 teaspoon ground cloves.

I really do not have a recipe to post. I am looking for one though. My mom used to make a chocolate pie from scratch when I was growing up. I have tried several recipes but none work or taste the same. They either do not get thick enough or they are way too sweet. I think it is called chocolate silk or chocolate cream pie with merigne topping. Please excuse the spelling.
If you have this please pm me with the recipe.

How about trying on allrecipes.com--they may find one for you, and so many cooks on that website!

Egg Custard Pie (North Carolina)

1 1/4 c. sugar
2 t. melted butter
1/2 t. salt
4 large eggs
2 c. milk
1 t. vanilla
1 pie shell - unbaked (I use the Pillsbury & a regular pie pan)

Mix all ingredients (I use the blender) and pour into the unbaked pie shell. Bake at 425 degrees for 25 to 30 minutes until the center is set.

(I put the pie pan into the oven and pour the egg mixture into the shell while it is in the oven so that I don't spill everywhere).
