Spaghetti sauce, no tomatoes?

My husband's favorite pasta sauce is simply olive oil sauteed with garlic, red pepper flakes, salt/pepper. I squeeze in a little lemon juice at the end. This sauce is also good mixed with a vegetable, like asparagus, and then put over pasta.

I had a leftover slice of pastrami one night but wanted pasta of some kind, so I made up this recipe.
The pastrami merely served as the saltiness. You could easily add bacon, ham, shrimp, etc., or no meat at all, still use a bit of olive oil to saute the spinach.
Jan’s Surprisingly Good Spaghetti!
Large serving cooked spaghetti
While spaghetti cooks,
sauté large slice pastrami, diced, in olive oil
Add and stir til wilted:
Juice of 1 lemon
Half container organic baby spinach leaves
Add:
Shake of garlic, Italian seasoning, salt, pepper
Toss spaghetti in grated parmesan then top with spinach mix and toss.

Thanks a lot for the suggestions and recipe. They sound so good, and for sure I will be using some of them soon.
You ladies are so helpful, and I appreciate your responses. I can tolerate a little bit of tomato, such as a slice on a hamburger, but not recipes with a large percentage of tomato.
