    OH MY...I did add walnuts and pumpkin pie spice as I love the crunch of nuts in my muffins and I love extra spicy pumpkin!

    These are so light and fluffy! NOW I want to try it with a Spice cake mix!!!


    You'll Only Need:
    1 Yellow Cake Mix (Yes, you can Use a Gluten Free Cake Mix, it WILL work!)
    1 -15oz Can Pumpkin

    Simply dump them into the bowl, mix and put into a sprayed/oiled muffin pan! Bake on 325 for 20-25 minutes! and they FREEZE well!

    This recipe is truly a 2 ingredient recipe. You don't need to add any oil, water, etc. However, you can add the following if you'd like:

    1/2 c. Chopped Walnuts or 1/2 c. Raisins (or a handful of both!)
    1 1/2 tsp Pumpkin Pie Spice

    i am using the tiny muffin tins..10 minutes,they have not risen yet...set the clock for 5 more.

    did the bigger muffins rise much?

    They turned out Great!
    i did add a cream cheese frosting..very lightly..milked down so really thin. didn't need it though!

    15 minute cook time at 325. i think i will freeze them, so i can toss them into the Dh's lunch and have some for the grandkids on thursday. yippee!
