I never use water.Just cake mix and pumpkin

Yup, just made it w/marble fudge cake mix & can of pumpkin only in a bundt pan (bake for 45 mins). Came out perfect, not too sweet. Can't wait to have w/my coffee im the morning! Thanks!!!

OH MY...I did add walnuts and pumpkin pie spice as I love the crunch of nuts in my muffins and I love extra spicy pumpkin!

These are so light and fluffy! NOW I want to try it with a Spice cake mix!!!


You'll Only Need:
1 Yellow Cake Mix (Yes, you can Use a Gluten Free Cake Mix, it WILL work!)
1 -15oz Can Pumpkin

Simply dump them into the bowl, mix and put into a sprayed/oiled muffin pan! Bake on 325 for 20-25 minutes! and they FREEZE well!

This recipe is truly a 2 ingredient recipe. You don't need to add any oil, water, etc. However, you can add the following if you'd like:

1/2 c. Chopped Walnuts or 1/2 c. Raisins (or a handful of both!)
1 1/2 tsp Pumpkin Pie Spice

try it with any cake mix you like and add a can of store bought frosting to it.

I have been reading a lot of the recipes today and by a rough calcuation have added a stone in weight with out even trying

Jacquie, I've got to try these this week! Diagnosed as pre-diabetic a month ago (so been exercising), and no sweets - chocolate, ice cream, or sugar have passed these lips!
