Ok, I grew up in Memphis TN, home of the Blues and Barbecue.
They serve dry rub barbq, dry rub ribs and sweet, spicy beans. They also serve barbecue pizza with chopped pepperoncini peppers on top. Very delicious! You can get "wet" barbecue, that means it has a liquid barbecue sauce, hot or mild, with a vinegar/sugar base. Or you can get "muddy" ribs, which are half dry rub and half wet.

Memphis is also known for "soul food", which is just about any vegetable cooked to death with onion, a teaspoon of sugar, and fatback or bacon; don't forget the hot sauce at the table. Cornbread, of course is required, and all this is sometimes served with spaghetti on the side, or fried chicken.

Memphis desserts: The most famous is the Peabody Hotel's Red Velvet Cake. Delicious, but not as good as my mothers. Coconut cake is also very popular. Ah yes, and pecan pie, my dh's favorite.

Another American food I haven't seen listed is the grilled cheese sandwich. My mama called them "cheesetoasts". Two pieces of bread, buttered on both sides, heated toasty in a skillet, with a piece or two of American cheese inside. You can get fancy and change the cheese and the kinds of bread (mine was always white bread) but it's still a cheesetoast. (1 word)

Here in Mississippi, they are famous for "cornbread salad", fried catfish and the works, slugburgers (don't ask), and chocolate cobbler.

I'M sure everyone knows KENTUCKY FRIED CHICKEN. Just now at our KENTUCKY STATE FAIR,was the dressed cheesburger and the bun was a KRISPY CREAME DONUT.People were actually eating them.$8.00.Icould visulize arteries clogging. HA HA! WHY MESS UP A GOOD DONUT.

Think of warm chocolate pudding that you pour over warm biscuits or pancakes. My family has a recipe that you can use to make pudding pies when it cools (same recipe)
