Whenever I buy a lemon loaf cake their is a slit down the centre of the loaf. I would like to bake my own. How do I get this slit ( crack). So I can add my glaze.

I'm betting that it cracks as it bakes

Yes, it cracks as it bakes. You can add glaze whether it cracks or not. I like to glaze them while warm, so it soaks into the cake better.

I like to use a bamboo skewer to poke holes in the top of my loaf (all over) before I pour the glaze on...this way if you pour the glaze slowly, it will soak into the cake.

It's like Pound Cake or Banana Bread, the slit just happens. I'm guessing that if you wanted a prettier crack, you could run a knife through the top inch right before you put it in the oven. I know that the knife trick works on "top-hat" souffle.

The crack does happen while baking. If your making the standard glaze out of powdered sugar instead of water add either lemon juice or lemon flavoring to make it more lemony. Lemon is my one of my fav flavors so the more lemony the better. Ohh you can also add strawberry juice for a nice sweetness flavor,,,,,, ok whens dessert?? lol

You should try my Lemon LEMON cookies. They taste totally different depending on how you eat them. Right side up they taste lemony, upside down they taste LEMONY
