Gently but thoroughly crack the cooled egg all over, pinch off the large (air pocket) end, and insert the tip of a teaspoon to nudge the shell off. I rotate the egg in one hand, with the spoon in the other to slide under the membrane and shell. Do it under running water for even speedier results.

Always start eggs in cold water, bring to a boil and boil for 10 minutes. Immediately pour off boiling water and cover with cold water. When cool enough to handle, crack the small end first, then the large end and all around. Use a teaspoon to insert just under the membrane and your egg will be perfect. I use the teaspoon regardless of the age of the eggs, "just in case". An 80 year old man taught me this trick, and I believe it to be priceless.

red hens lay brown and lot of other kinds lay white. there is no taste difference either. The store eggs are old that's way the yokes are so pale and there is no taste to them.

This is slightly off topic, but DH took 8 eggs over to a friends house for the 'guys' weekend and he said they were bad. I have been using eggs before he took them and the ones still left. None of them were bad. He told me they had air in them and when he put them in water they floated. H e was going to hard boil them. He threw them out. UUGGHH!

Unfortunately, it is very difficult to peel very fresh hard boiled eggs!!!! Plunging the boiling hot eggs into ice water after draining the hot water, then peeling the eggs immediately, helps. But the best way to be sure is to use older eggs.
