Breakfast Enchilada's..

We had venison tacos last night for dinner, and since I had a little bit of the meat leftover, and 4 shells, I decided to make enchilada's for our breakfast.. From the frying pan, to the hand, to the leftovers, hope you can see how good they were.. Homemade salsa in, and on top - tomatoes, peppers, cheese! Yummo!

Looks so good--we love deer meat! Nothing in the world like fried deer meat mmmmmmmmmmmmm...

I am not a breakfast food kinda morning eater, so if I have to eat anything at all , it has to be dinner or lunch type food. This was a cross between breakfast ( scrambled eggs ) and lunch ( venison and veggies. ) I would eat all veggies if I could, forget the meat.. making homemade bread dough right now ( rising on the counter ) and will have cheese/ veggie pizza later..

HAHA.. you had me scratching my head trying to think if I had chatted here with you before.. Love any mexican or chinese recipes, so if you have anything, pass them along, ok? I just made chimichangas the other night, and a yummy Kung Pao Chicken ( chinese ) last week.. so good.

We have a restaurant that we go to for breakfast. I always have the enchilada omellete. It is the best!
