I love meatloaf and Paula Dean, so yes I would like the recipe.

I will be using my crockpot a lot this Fall and Winter for dinners. Easy and leftovers are nice.

We're having a few days of chilly, maybe rainy weather here. This morn I made a slo cooker of chili.Had 1/2 pd of cooked sausage (made for another recipe)....so added that,along with gr beef.DH had to have a bowl for lunch, but it'll be even better by supper time.
We usually have it twice, then I freeze what's left. Along with beef veg soup & broth frozen for noodle soup, it's so easy to grab from freezer on a busy day. |
To make meatloaf in crockpot I just use my regular recipe. To get crock pot ready put about 3 balls of foilin pot ( golf ball sized). Then using a long strip of foil folded in half length wise form your meatloaf on this.Pack really well , lift the foil with meatloafon it into crockpot. Cook till done. The balls of foil will keep meatloaf out of juices. The folded foil makes it easy to lift meatloaf out of pot.Let sit for a few minutes, serve as usual. Some people cook carrots & potato in crock pot as well. I didn't care for it.

I make my meatloaf in muffin tins. It makes a nice serving size and cooks in about 20 min.

I make many small meatloaves in my New Wave oven so the grease goes out and into the bottom under the rack. I freeze them and my hubby loves taking one in his lunch. I only like them hot. Cold sandwich EEEEEW!

Count me as another Paula Dean Meatloaf fan! I didn't care for meatloaf either, until I made this one. Our whole family loves it, even down to the great-grands! I don't cook that often anymore, but when I do I love this with mashed potatoes, and usually green peas and cornbread. Yumm.......
Here's the recipe: 1 pound ground beef (I use 90% lean) 1 1/4 teaspoons salt 1/4 teaspoon ground black pepper 1/2 cup chopped onion 1/2 cup chopped bell pepper 1 egg, lightly beaten 8 ounces canned diced tomatoes with juice 1/2 cup quick-cooking oats Topping: 1/3 cup ketchup 2 tablespoons brown sugar 1 tablespoon prepared mustard Preheat oven to 375 degrees F. Mix all meat loaf ingredients well and place in a baking dish. Shape into a loaf. Topping: Mix ingredients for topping and spread on loaf. Bake for 1 hour. Call me when it comes out of the oven! |
This is the PD meat loaf recipe I found
Ingredients: 1 pound ground chuck 10 slices bacon, cooked and crumbled 1 (8-ounce) package sharp Cheddar, grated 2 large eggs, lightly beaten 1/4 cup bread crumbs, toasted 1/4 cup mayonnaise 1 tablespoon Worcestershire sauce 1/4 teaspoon salt 1/4 teaspoon ground black pepper 1/3 cup ketchup 2 tablespoons prepared mustard 1 (3-ounce) can French fried onions Directions Preheat oven to 350 degrees F. In a large bowl, combine the ground chuck and next 8 ingredients, mixing well. In a small bowl, combine the ketchup and mustard. Stir 1/4 cup ketchup mixture into meat mixture, reserving remaining ketchup mixture. Press meat mixture into a 9x5x3-inch loaf pan, or shape into a loaf and place on a rack in a broiler pan. Spread remaining ketchup mixture over loaf. Bake 40 minutes. Top with French fried onions; bake 10 to 15 minutes, or until meat is no longer pink.
