May,

I'm making that too except we call it cornbread casserole and it's the only way to eat creamed corn as far as I'm concerned. I am making tiramisu for dessert for Dh. He just loves it so I make it about three times per year for him. I love the leftover coffee with the amaretto in it after it's all made. Start drinking the coffee too early and you can screw up the dessert.

I would add cole slaw and fresh asparagus to the menu.

I gained 10 pounds reading this thread! Yummy! The only thing I can add is dried lima beans cooked after the ham in the ham drippings. Or lentils with lamb. Sounds like we're all going to eat well tomorrow! Happy Easter! Pace yourselves!

We are having barbecued salmon, long grain/wild rice, creamed corn and deviled eggs.

Well we were going to have deviled eggs but my son made scrambled eggs today and there is only enough left to make the pumpkin pie.

Dinner is ham with pineapple and brown sugar glaze, pickled beets, Irish soda bread, applesauce, baked sweet potatoes, corn and broccoli.

Dessert, Spritz cookies, key lime cheesecake and chocolate cake with chocolate ganache

Oh and there is only 3 of us so DS will be taking leftovers back to school with him.
