Interesting answers!! I used it a while back in a brownie recipe, and didn't care for it. Sure didn't stop my boys from eating the brownies, though.

The light or extra light probably wouldn't change the recipe much. But the extra virgin is heavier and has a stronger flavor so might change the final results some.

I ran out of the light olive oil so only have the dark extra virgin here at home and it does makes things taste different because it has a stronger flavor. I don't think the light oil would make that much of a difference though. I've heard apple sauce is a good substitute for oil, but never tried it myself.

I mostly use un sweetened apple sauce in baking recipes.Brownies,cake,quick breads etc.Nas always worked fine.

It is just fine. You might also try coconut oil. It has the same health advantages as olive oil.

Depends on the olive oil. Some are stronger than others. I'd run to the store....

There is an Italian cake that is called and Olive Oil Cake. I have never made it, but we buy big bottles of extra virgin olive oil at Costco and use it in everything. I never noticed any different taste to it.
