My DH uses it in everything he cooks, whether it needs oil or not... he watches too many of those cooking shows and fancies himself as Emeril.

Yes. I use it in more than just savory cooking. If you don't want the heavy olive oil flavor of extra virgin oo , use a light olive oil. I keep both in the pantry.

I sub applesauce for the oil. I don't measure it, I've been making pancakes from scratch for so long I just eyeball it, but if I had to guess, I'd say 1/4 to 1/2 cup. If your griddle is non-stick, you should be fine, but if you have problems with the pancakes sticking, try adding a couple of tablespoons of oil.

Wow, I would have never dreamed you could use olive oil in baking! I thought it was going to be a joke when I opened the post. Now I'm going to have to try it.
