Is it ok to use olive oil in a cake mix?

i use it all the time. it seems to give them a bit of a better taste.

My daughter once tried it in homemade pumpkin bar recipe when she didn't have vegetable oil. I thought it made the cake a little heavier in texture, but it certainly tasted good. I would use it in a pinch.

The Louisville CourierJournal had an article in it a few weeks ago on this subject. They had several recipes of cakes made with olive oil. Have you googled the subject?
