Roast is rare around here, too, but when we have it it's been in the crock pot all day long. Use Lipton onion soup also - sometimes Campbells' French Onion Soup. Mashed potatoes here - red ones are good too. I don't like how the carrots and potatoes come out in the crock pot - sometimes cook too long. Grew up eating roast-rice-and-gravy. Say it like it's all one word. :) Husband grew up with the mashed potatoes and I converted. The gravy from the roast is just so good!

Thanks for all the suggestions. cjomomma the gravey mix sounds like an idea I will use. Will go with oven roasted veggies. Used to do those many years ago.Since retirement we no longer cook big meals. Thank god for BBQs & eating out. These years home cooking is soups or stews.

That's the way I do mine! Also, if he doesn't want potatoes at all, make a pot of rice.

Wow i find it funny to see so many people do what I do. Potatoes and carrots in with the roast. My eldest hates carrots, but when done this way she will eat them.
But that is all we normally do Meat, potatos, carrots and bread to dip in the juices.
Yum Yum, makes me hungry thinking about it.
