I've been sliding by on meals for over a week due to the triple digit temps. So tonight I bit the bullet turned the exhaust fan on and made chicken cheese enchiladas with salad.

We did receive a light shower and the temps feel like they have dropped to the upper 90's.

I have some nice salad greens and some homemade marinara sauce I'll toss with noodles. Fruit salad for dessert. Aren't the veggies and fruit wonderful this time of year!

Leftovers tonight from the freezer--red beans and rice. Always better as leftover to me, anyway! It is too hot for hot food, so I have the a/c going!

Spaghetti with marinara sauce with added turkey italian sausage, sauteed onions and garlic, and mushrooms. Green beans with almonds. Carrot sticks. Sugar free fudgsicals (sp?) for dessert.

take-out pizza...my guys returned from Canada today and are both wiped from all of that car riding/driving...It was a three day trip.

Sounds good! but I have funny about a spinich salad. We went on a trip with inlaws stopped for dinner. I ordered spinich salad well every ones food came but mine.
It took forever then when it did it was HUGE!!! I mean it could have fed 10 and it had the works!!! Boy Do I still get Teased and will never order a spinich salad when were out just in case. :oops:
