I don't dislike it, but meatloaf takes too long to cook.

Yum, meatloaf is always good! Especially love meatloaf sandwiches the next day!

When DD comes for dinner, they both request Meatloaf:

2 eggs
2/3 cup milk
2 tsp salt
1/4 tsp pepper
3 slices fresh bread (pinched into crumbs)
1 onion chopped
1/2 cup shredded raw carrot
1 cup shredded cheddar cheese
1 1/2 lbs. ground beef

Sauce:
1/4 cup brown sugar
1/4 cup ketchup
1 TBSP prepared mustard

Break eggs into a large mixing bowl & beat lightly with fork. Add milk, salt, pepper & bread crumbs. Beat until the bread disintegrates. Add onion, carrots, cheese & beef mixing well. Pack into a 9"x 5"loaf pan. For sauce combine the brown sugar, ketchup & mustard & pour over the top. Bake at 350* F for 1 hour. Let stand 10 minutes & serve. Will freeze well & is also nice cold.

We usually serve garlic mashed potatoes with it.

I am so sorry but I'm sure my meatloaf is the reason for the bum rap... My husnband and boys will eat just about anything - but my meatloaf... and it was like a hockey puck ONLY ONCE - but it cured them... they made fun of it and refused to eat it... I don't make meatloaf any more.

As for the eggs in the middle - I never heard about it for meatloaf, but some German recipes use a boiled egg in stuffed flank steak. You may have called it.
Why do they put a boiled egg in the middle?
'Cause it looks really cool when you slice it. A color photo of a meatloaf like this got a half-page spread in one of my cookbooks!

I'm with you! LOVE those cold meatloaf sandwiches! I did make the meatloaf with Stove Top stuffing that someone mentioned at the beginning of this post and really liked it. Of course, I like anything with stuffing! Best part of Thanksgiving :D

LOL me too. I have put all kinds of stuff in meatloaf, salsa, mushrooms peppers onions celery left over cooked veggies. Just like jumblaya it is a great fridge cleaner outer. One trick about keeping it from drying out is to soak your breadcrumbs or oatmeal in milk before mixing it with the meat. Comes out moist every time. YUM

I started making meatloaf from the recipe on the oatmeal box. I change it up once and awhile but basically 1 1/2 lbs hamburger, 2 beat up eggs, 1 c. oatmeal, 1 small can tomato sauce, a good slice of onion chopped. Mix well, put in a cassorole dish and seperate it down the middle both ways. (Like a cross) I call it streets and alleys. I cover it with wax paper. Microware on med high for 5 minutes, then 15 minutes on high. Short time and done no heat in the kitchen.
