I always took the meat mixture and made it into patties and fried them like hamburgers and my kids never knew the difference. They so hate meatloaf. They just think I made a doctored up version of a hamburger. Now shh don't you all tell them. They won't eat it if you do. LOL

I love Meatloaf's singing! Paradise by the Dashboard Light is one of my favorites, I Would do anything for love (but I won't do that!)

Sounds yimmy! I never understood why people were anti-meatloaf either. My Mom and Dad make great meatloaf and I have always liked it.

I like meatloaf as well. I like it made with beef, but I now make it with ground turkey meat. I use egg,green pepper, onion, catsup or bbq sauce. Shape into a loaf or just make individual patties and simmer them on med/low top stove with a top on the skillet, turning them a couple times. They really are good. If making the loaf, I bake in the oven at 350 for about an hour.

As for the eggs in the middle - I never heard about it for meatloaf, but some German recipes use a boiled egg in stuffed flank steak. You may have called it.
