Default Burrito Casserole

1# ground beef
Chopped onions
1 can refried beans
1 pkg taco seasoning
1 can cream of mushroom(or chicken) soup
1/2 cup sour cream
Flour tortillas
2.5 cups shredded cheese Mexican style

Brown meat with onions. Stir in refried beans & taco seasoning. Set aside.
In bowl, mix soup & sour cream.
Flour tortillas- size doesn’t matter
2.5 cups Mexican style shredded cheese, divided in half

Spray oven dish. Put half sour cream/soup in dish.
Add 1 layer tortilla, cut to fit. Overlap to completely cover sour cream mixture.
Add 1/2 ground beef mixture.
Add 1/2 cheese
Repeat layers.
Bake 350 for 20 minutes or so. Can be made & baked later but allow more baking time if cold from refrigerator.
It reheats fine.

I make this recipe and love it. Usually leave out the refried beans and it's still very good. It's only me here so after I eat what I want I let it cool, cut it into individual servings and freeze for later. It freezes very well and I just reheat in the microwave.
