Do you pin when piecing?

It depends. I do not pin basic pieces but as soon as I put together anything with matching seams, I pin on both sides of the seam. I learned that paying attention to pressing the seams in the correct orientation can help in block assembly - so that is where I also spend a lot of time. I love it when the seams "nest" because you can feel that the fit properly.

I don't belong to the "oh I never pin anything" group - but neither do I pin like crazy - I just pin if I feel it's necessary.
The three-pin method at intersections is a very good method.
However, those double pins (like Alex Anderson used on some of her shows) were a disaster and distorted everything.

I HATE PINNING!!! I think its the one thing about quilting that I just can't stand, however, I will do it only when necessary (and after I've tried it twice without pinning and have to unsew, cuz' I hate unsewing more than pinning), however Elmer's glue is my new best friend, so if I can glue it, I will.

I do a lot of paper piecing and then use only 1 or 2 pins before stitching the seam. But when I'm chain piecing, I don't use pins. When I'm sewing long strips together to form the quilt top, then I'll pin at each seam to match up them up. Also do not sew over a pin. I've found I really like flat head pins. The wire for the pin is thinner, so very easy to insert in fabric and if you happen to sew over one, it's less likely your needle will hit it.
