I'm glad you found some fabric for the binding. I, usually in this same predicament will bind a baby quilt using whatever left over fabrics that are used in the quilt itself. Well, most patterns advise on how much fabric to buy for the binding, sometimes you have too much binding left over. But I do know, and someone can double check me, please, that from 5/8 yd you can get 7 yds of binding if cut on the bias. From 1/2 yd you can get 8 yds cut on the grain. Unfortunately, I need 9 1/2 yd. :).

I have tried this and it work good to stretch out your fabric. Just take your original binding strip off the quilt, cut it is half lengthwise and join the two lengths together. Adjust the widths of the two fabrics so that the total width equals your usual biding width.
