I think the quickest and the easiest are the patterns you like to do. Making it a child's quilt has more to do with the fabric than the pattern.

I would recommend concentrating on quilts for boys. We quilters are mostly women, and we all seem to love "pretty" quilts. However all the groups I have worked with have a definite shortage of things for boys. I always try to make 2 or 3 boy things for every girl thing I make. It doesn't have to be super heroes, but items that aren't pink and flowery will definitely get used.

A quick quilt pattern I have used more than once is "My Favorite donation quilt" 41 x 56 in. Sorry I am not good at sharing links, easily found with Google. May not be big as you like, could add some borders?? Stash buster too.

Maryquilts.com and Bonnie Hunter's Quiltville.com have great free patterns.
