If your quilt machine doesn't have a stitch 'regulator' you are going to fast.
If it does it's the tension, I would start by increasing the tension on my bobbin if the quilting platform you are using has that option.

A quick test to find out if it's the tension or if it's you moving too fast is to stitch a straight line. If those stitches are good, then it's you going too fast. If the straight stitches are loopy too, then it's your tension.

If I have enough fabric left, I make a little piece of top, batting and backing 10 x 10 or so to test on before I start and every time I change my bobbin. It's saved me a lot of time.
