I would use "Just Can't Cut It" because it uses large scale fabrics. The pattern calls for one 'primary' large scale plus five to coordinate with the primary, but I have done this pattern using several fabrics when I had a custom project to do. I used horses, state birds, paw prints, daisies, and sea-shells! I saw that I could tie all these assorted fabrics from the requestor together with some brown and golden caramel colors, and it worked out.

I would do snail trail in blues to look like a wave of water, and alternate w/ whole cut blocks of the horses and dogs.

I still like going to Warm Wishes. I am always making small changes to the basic pattern to make stunning quilts. And it is fast to piece and quilt.

Have you thought of doing an adult I Spy quilt for him? So much to look at and identify...
Here's a great one made by board member vintagemotif, for her 86 yo Dad:

I made my brother in law a "fish quilt" with a D9P look. I simply made the large squares the fish and put sashing and squares that coordinated in a D9P pattern with all the fish right side up.

A BQ quilt would highlight his favorite fabrics. https://www.pinterest.com/pin/328199891567141054/
