The lines on my cutting rulers match up perfectly with the lines on my cutting mat. Either they are both wrong, or they are both correct.
I always use the lines on my mat to cut my fabric. To me, the only problem with using the lines on your mat to always do your cutting is that the wear and tear to your mat could cause more ridges along the lines. When my mat is no longer functional, I buy a new one.

She uses techniques that leave bias edges. However! The things she is demonstrating are not intricate or demanding of perfection that some patterns require. She is marketing her precuts and does things that work well with those and are fast and easy. Usually seams don't have to meet exactly like some designs do. She is having fun with what she does and is trying to spread that enthusiasm. I would not recommend her methods for the beginning quilter since she does "cut corners' on techniques. A more experienced quilter knows when to do that and when to do better. (Have you noticed she doesn't have a video on how to remove stitches? Most of her designs are pretty forgiving.)

For me, this whole discussion is silly - my sewing is so slapdash, the minor difference in the mat vs ruler doesn't matter.
My goals are 1.) looks good enough and 2.) finished.

Nothing wrong with using the mat if you check to see if it's accurate. One issue that turns up as your mat ages is that it gets cut multiple times and is self-healing, so the lines can move/distort/fade/or go wonky over time. If it's still accurate, go for it. I prefer my ruler unless I'm cutting a piece too large for any ruler I have, then I use the mat as well.

I use both almost interchangeably. However I have noticed that sometimes the fabric can "grow" just a bit over the line. I suspect if I used only the ruler that would not happen.
Having said that, being aware, I watch close for it.

I rarely use the marks on the mat, because I was also taught NOT to use them. However I do use them to line up the fabric and .. on occasion.. I have used them for cutting. But I never "feel" that it is accurate, only due to what I was taught.
