Pink and white is a classic combination. No reason it wouldn't work.

I would vote for a medium to dark brown. Pink and brown are nice together, at least that is what I think when I see chocolate and strawberry ice cream.....

Any color you choose would look good -- I just made one in shades of light gray with brights as the squares in between -it looks really nice!!

I think white would look great if you go bak to the bright hues for the binding.

Take a look over in Pictures - feline fanatic showed a jelly roll in bright pinks today, it is really nice looking. Just another idea for you.

I really like the combination of pink and soft grey. That would be my suggestion, especially for an older woman. Very restful next to your brighter pinks.

I always thought white or black squares would look kind of neat, but after looking at the ones on this pinterest page I think I prefer the strips cut & joined on the diagonal & if you want a splash of something else, then an appliqué. JMHO

I think the white would look good. I have seen a jelly roll quilt in blues done with the white squares and it was striking. Should work for pink as well.
