Well almost done, not sure how I'm gonna do the hat? Velvet just didn't work out.

Wonderful Job! Maybe couch some fuzzy red yarn? Do some crewel work using a fill stitch?

Or some faux red fur that they have in craft/fabric stores? I have used that before for a Santa suit and hat.

Why did you decide against velvet? How about velveteen? It is usually cotton, just thicker that quilting cotton. You could machine applique it on.

Ultra suede works real well on applique. Maybe see if you can kind of audition a piece in the store before buying it.
