I have a slash cutter..... scissors is way to hard on the hands - well for me anyway..... flannel works the best but you can use other fabric if you want.... just remember you either have to sew on a 45 degree or cut your fabric on a 45 degree or the fabric will not as you say fuzz out.
Hope this helps you..... one thing I wouldn't do is mix fabric..... all cotton or all flannel.

completed two of these quilts.and a third one cut and layered but not sewn......
worse part is the cutting........fingers ache but is well-worth the the pain when it is finished..
yours is beautiful....love the colors

I also used the slasher but had to rely on the scissors for the last 1/2" toward the center.
Someone mentioned a larger one...and all I can think would be to join more blocks before adding the binding. It would take some planing as the backing would mostly have to be finished by hand. Something to think about.....
A few years ago, I was in Boone, NC and at a local quilt shop. The ladies at the shop were making a chenille wedding quilt........all layers were white and it was absolutely gorgeous.
I didn't get a chance to get an up-close look so I don't know how they were making this larger one......wish I had been able to view it closer but they were in the back room and I only got a glimpse of it
