Go on Craigs list and find a fold up ping pong table. It works great for pinning the biggest of quilts. When it is not needed you can fold it up against a wall. Put flannel on the bottom side and it can work as your design wall when folded up. They are great!

I am sure someone already mentioned this, but what about a room dividers and cover it up with a flannel blanket.

I think I would get a pull down blind for the window by my sewing table and attach some flannel to it for a design wall. That way it you would be able to roll it up when you didn't need it. There's also a video link on here somewhere about laying out your project on a table and rolling it onto boards. Then you roll you a little at a time and baste, roll out a little more and baste. You might try purchasing some boards of different lengths and some folding tables that you could set up when you needed and take down when not in use. You have a lovely studio.

p.s. You can also use one of those cardboard folding cutting mats (used for dress patterns), a couple of cheap curtain rods, some flannel and some large bulldog clips. Attach the flannel to the board, then use the clips to attach it to the curtain rods. The rods keep it from folding up. When not in use, detach the clips, fold and store it away.

Otherwise, what about the kind of display wall that some people use, that is like a roller blind? If you fixed it to one of those sloping ceilings, when you pulled it down, it would hang straight.
I like the idea of a roller shade...or, since your DH is so clever, he could make a rigid frame that is hooked to the ceiling on one side with hinges and the other side can be raised/lowered as needed. When lowered, it would hand straight down for you to work on and when raised be flush with the slanted ceiling - use cording for raising/lowering and tie to brackets on the wall to hold in the closed position.

Can I come over and sew? LOL I don't think I would ever leave if I had a sewing room like this. Any way you can put up a shade over your big window and make it a design wall?
