I made a red and black one and intend to do fancy feathers and a sort of Chinese knot in the centre squares, The Chinese knot looks a bit celtic. I'm about to start it - so hope it works. I thought stitch in the ditch was a bit boring for a dynamic quilt.

WOW! That's gorgeous! You did an awesome job with the fabric selection!
You didn't say what your quilting skill level is, but you've got so many options! Personally, my first choice would be feathers. I can't do them myself, so on my braid I quilted wavy lines and curlicues. I drew up the pattern myself, copied it onto Sulky Solvy, pinned to the quilt and followed my lines.

Gorgeous quilt. I'm laboring through my wonky quilt, which is the V pattern, similar to the braid, and the biases caused me a ton of problems. I didn't want to rip out since it is for me, but surely not my best work. I meandered mine, which I like.
For anyone who has made one of these, did you stay stitch the panels before you trimmed them?
