    Sounds delicious!!! Will definely try. I made several loaves using Splenda. Do not use as much as the recipe calls for. I use Splenda for lots of baking, especially Bread Pudding.

    Yes. If I have enough applesauce, I have been known to cut the oil down to 1/2 C oil and 1/2 C applesauce. It does cut the calories and the applesauce provides the moisture that would come from the oil. When I thaw the grated zucchini, I never drain the juice but just put it all into the recipe. I learned the applesauce trick from my MIL who's a diabetic but cannot tolerate any artificial sweetener.
