Beefy Cheese Enchiladas

Beefy Cheese Enchiladas

Ingredients:

2 pounds of Ground Beef
1 block of American Cheese (not velveeta) cut into thick sticks,
like carrot sticks approx 20 to 25 (for 9 x 13 casserole dish)
2 cans of Old Elpaso Red Enchilada Sauce
1 small onion (chopped)
1 small can Black Olives
20 to 25 corn tortillas
oil for frying the corn tortillas

Prepare as follows:

Preheat oven to 300 degrees
2 pounds of ground beef browned, drained
season with
1/8 cup of chili powder
1 Tbsp of onion powder
1/2 tsp of garlic powder
pinch of cumin
salt and pepper to taste
set aside

Spray a 13 x 9 casserole dish with non stick spray
Dip each corn tortilla in the oil for a few seconds, then place in a plate, take each cheese stick and roll up in each tortilla, and line them up in the casserole dish until it is full.
Spread the onion on top of the enchiladas.
Top off with one can of the Enchilada sauce
Then add the seasoned beef to dish
Pour the other can of Enchilada Sauce on top of the beef.
Top off with some shredded American Cheese
Then top off with the Black Olives.
Place in oven and let heat through about 15 to 20 min.

I never have leftovers =( LOL!

I use the same ingredients except I put all the stuff in the tortilla and roll it up, top with cheese, onions and sauce and bake ! Yummy!!

I use to do it this way, but decided it was easier and faster to roll the tortilla up with the cheese stick, and then put the rest on top of it. The family still loves it, so if their happy, I'm happy =)

Sounds delicious. How important is it to fry the tortillas? Why not just roll the cheese up without the extra oil and work? Just curious. Does it add a lot to the recipe to fry them?
