I feel the same way about them, but grow them to pickle for my husband. Here's one recipe I tried, and I actually ate the beets and didn't mind them. Once a year is enough, however!

My DH would say toss them out. He hates beets so we never eat them.

That sounds yummy, think I would roast them first though because love the taste of roasted beets...so I bet would be great in your salad.

yup. we make borscht. we never boil them though. we wash them off, and then wrap them in foil. toss them in a cake pan or on a cookie sheet, and bake them at 350-375 for 1 1/2 -2 hours, depending on how big they are. when they are "fork tender", take them out, and let them cool until you can unwrap them. then, just "slip" them out of their skins, cut into chunks, and serve up with butter. you will not believe the deep color and deep flavor they have, this way. they are like candy, in my book!

I can't believe that more of you don't eat the beet greens. They are so yummy. At the price we have to pay in the grocery for them, I NEVER buy beets unless the greens are fairly young, tender and fresh. I get double value for my extravagance that way. I like the greens even better than swiss chard or spinach which are my 3 top favorite cooked veggies.

Roasted beets are my favorite--just peel, cut into wedges, toss with a little olive oil (or other oil, as desired) and spread out on a cookie sheet. Roast in the oven, uncovered, until tender, which will depend on age and size of beets, size of pieces, and oven temperature. Lightly salt when done. They should brown a little on the edges, and by then will have dehydrated just a bit, concentrating their sweetness. Add other root veggies to the pan if you'd like--carrots, sweet potatoes and onions are delicious too--but keep red beets segregated while cooking or the color will bleed. Yellow beets play nice with the other veggies.

Wish I lived close to you I would sure buy some from you. I canned a couple of jars of pickeled beets that a friend had given me but would love to can some more.
