Cheese Ball
#12
I just got the 2007 Southern Living Cookbook and it came with a small Cheesecake recipe booklet. Ahhhh!
I was surprised that there are two herbed cheesecake recipes which you serve like a cheeseball - meaning you serve it with crackers as a party spread, just in cheesecake form.
One is called Artichoke Cheesecake, made with parmesan cheese, feta cheese and cream cheese plus lots of good veggies like red and green bell pepper and artichoke hearts!
The other is Sun Dried Tomato Cheesecake and it is more plain.
You can find the recipes at www.SouthernLiving.com/southern if you want to peek at them.
Makes me want to have a party!

Here's another cheese ball which is delicious and always causes a surprise reaction because of the pineapple - you just can't imagine how it can be good combined with the other ingredients - but it is!
2 cups chopped pecans
2 - 8 oz packages of cream cheese, softened
1 small can (8 1/2 oz.) crushed pineapple, well drained
1/4 cup chopped green pepper
2 Tbls chopped onion
2 tsp. seasoned salt (i.e. Lawrey's) or garlic salt
(Sometimes I use a tsp. of each)
Set aside 1 cup chopped pecans.
Combine other cup of pecans with all other ingredients and blend well. Shape mixture into a ball. (It will be soft and sticky, so I just pile it in a Saran-lined bowl and just kind of round it up.) Refrigerate until firm. Reshape if necessary and roll ball in 1 cup reserved chopped pecans. Serve with crackers.
Here's another cracker spread or dip using Braunschweiger (liverwurst). Years ago, I sampled it at a grocery store that was featuring the braunschweiger, and I've been making it ever since for company. Men usually love this and so do I. It's not too great for your cholesteral, but for entertaining on special occasions, why not?
8 oz. braunschweiger, removed from casing
1/4 cup sour cream
1/4 cup mayonnaise
1/2 cup chopped green peppers
1/4 cup chopped onions (more to taste, if desired)
3 drops of hot sauce
Combine all ingredients, mix thoroughly. Goes great on rye bread, crackers, and is delicious as a chip dip.
